One theory is that petting reminds them of kittenhood when mother would groom them whilst they were feeding from her. Being petted/groomed is very cowhy do cats slobbermforting and can be enough to make some cats drool in anticipation of being fed. It's an involuntary reaction that they have no control over.

My cat doesn't do that. Maybe it's just your cat.
